11/20/21 O&A NYC FOOD: Old School Thanksgiving Cornbread Dressing 

This Old School Cornbread Dressing  recipe by Chef Jeffery Williams has been a Thanksgiving staple for the Williams household for over 40 years.

 Ingredients

1 pan OLD SCHOOL CORNBREAD ( crumbled)
2 quart OLD SCHOOL TURKEY stock
1 cup chopped celery
1 cup chopped onions
2 tablespoons chopped sage
2 tablespoons chopped thyme
2 tablespoons chopped rosemary
1 cup chopped turkey neck meat( previously cooked for 1 hour)(optional)
1/2 cup chopped giblets (previously cooked for 2 hours)(optimal)
1# sage breakfast sausage
4 eggs beaten

Recipe

1. In large stock pot cook sausage until brown and crumbled Add onions, herbs ,celery and turkey stock Simmer for 30-45 minutes

2. Add turkey neck and giblets Simmer another 10 minutes

3. Add stock to crumbled CORNBREAD in large bowl and add eggs Mix well and season with salt and pepper

4. Pour in baking dish and cook for 30 -45 minutes uncovered on 350 degrees or until its slightly set (don’t over cook, dressing should be moist, not dry and crumbly. Maybe crisp edges.

THIS CAN BE FROZEN UP TO 1 MONTH
